Healthy Option Snack - Date & Almond Biscuits

Home made - Date and Almond Biscuits


Preparation is the key to eating healthy. Sunday afternoons are a ritual for me in the kitchen! It's fun creating new tasty snacks for the week ahead to keep me on track! This helps set my pace for the rest of the week. I know snacks are my weak point so this is how I fix that! With healthy options at arms reach I'm on my way! 



2 Cups Rolled Oats
1 Cup Organic Dates
1 Cup Almonds - Chopped small with a blade processor
1/2 Cup Organic Prunes
1 small Apple finely grated
1 Tablespoon Cinnamon
2 Eggs - Lightly Beaten
2 Tablespoons of organic honey

Mix dry ingredients in a bowl with a spoon.
Add eggs & honey to mixture, mix until doughy, clumpy texture forms. You can add water if you are struggling to get mixture to combine. Using a desert spoon, put mixture into moist hands to make a biscuit shape & place on baking tray. Bake in a fan forced oven for 20-25minutes on 180deg, turning over half way. Biscuits are cooked to be soft on the inside.

Notes: Dried fruit does contain sugar so be sure to check your labels. I still like to use them because I believe in a balance of foods, and when we are all busy some dried fruit can be a better than other options at our finger tips. You can always use more nuts in this recipe, I change it for myself each week. Cinnamon also helps to increase the metabolism, what great news!!
